No kidding, this is one of the easiest recipes you will ever learn. So forgiving, I’ve tried it with tonic water, and other sodas with absolute success! A perfect morning or afternoon treat to whip up in an instant for your friends and family on a relaxing Sunday or any day.
Raspberry Soda Scones
Ingredients
- 4 cups plain flour
- 3 tsp baking powder
- 1/2 tsp salt
- 300 ml cream 33-35% fat
- 300 ml lemonade or soda water
- 1/2 cup frozen raspberries crushed

Preheat oven to 220°C

Sift all the dry ingredients into a bowl. Make a well to pour in the cream and soda water. Very quickly, but gently, mix everything together.

Generously flour the bench and pat out dough to 1 inch thick. Sprinkle frozen berries over the dough. Roll up dough like a scroll (this helps distribute the berry bits more evenly) and pat it down again to 1 inch thick. Don’t overwork the dough.

Cut out circles with a ring cutter and place discs on a baking paper lined tray. You can gently layer the excess dough on top of itself and press down to cut more rounds from the dough. The very last portion can be gently pat into a ball.

Bake for 10-15 minutes. Check they're cooked by trying to pull the top off one of the scones… you should be able to see if it's still doughy or nicely cooked through.
