Loving these super thin almond wafer cookies!! My daughter is a dessert addict and we are always testing gluten free versions of her favourite foods ever since she became gluten intolerant… For these wafer cookies, it’s as simple as mixing four ingredients together, sprinkling on some almond flakes and icing sugar when cooled. Delectably crispy 🙂
Gluten Free Almond Wafer Cookies
- 35 g egg whites
- 35 g castor sugar (icing sugar)
- 35 g gluten free flour
- 35 g melted butter (room temperature)
- Almond flakes as desired
Preheat oven to 180C and line a baking tray with a silicon mat or baking paper.
Combine all the ingredients in bowl and whisk together well. Divide the mixture into 6 large spoonfuls onto the silicon mat and using the back of the spoon, spread the mixture out into a thin disc about 14cm in diameter.
Sprinkle with almond flakes. Bake until golden, about 8 minutes. Remove from the oven and allow to cool.
Sprinkle cookies with sifted icing sugar to serve.
