Gluten Free Almond Wafer Cookies

Ingredients

  • 35 g egg whites
  • 35 g castor sugar (icing sugar)
  • 35 g gluten free flour
  • 35 g melted butter (room temperature)
  • Almond flakes as desired

Instructions

  1. Preheat oven to 180C and line a baking tray with a silicon mat or baking paper.
  2. Combine all the ingredients in bowl and whisk together well. Divide the mixture into 6 large spoonfuls onto the silicon mat and using the back of the spoon, spread the mixture out into a thin disc about 14cm in diameter.

  3. Sprinkle with almond flakes. Bake until golden, about 8 minutes. Remove from the oven and allow to cool.
  4. Sprinkle cookies with sifted icing sugar to serve.
