Here is a recipe I made on the Marilyn Denis Show. A succulent portion of Beef with Blackberry Bourbon Sauce for a grilling day special episode which was as wonderfully impressive as it was easy!
Beef with Blackberry Bourbon Sauce
Servings 4
Ingredients
- 4 x200g portions of filet mignon room temp (trimmed and 1½ inches thick)
- 2 Tb olive oil
- coarsely ground salt
- coarsely ground black pepper
- 1 Tb fresh thyme leaves
Blackberry Bourbon Sauce:
- 1 Tb olive oil
- ½ small red onion finely diced
- 2 cloves garlic finely diced
- 1 jalapeño pepper seeded and finely diced
- ¼ cup bourbon
- 3 Tb apple cider vinegar
- 2 Tb brown sugar
- ¼ cup ketchup
- ¼ cup water
- 1 cup fresh or frozen blackberries
Instructions

Heat oil in a small saucepan over medium heat. Add the onion and cook until tender, add in the garlic and jalapeno, sauté for 1 min.

Add the bourbon and simmer until most of the liquid has evaporated, then stir in the vinegar, brown sugar, ketchup, water and blackberries. Return to a boil then reduce the heat and simmer, stirring occasionally, until it thickens up (approximately 10 minutes).

Preheat grill to high.

Rub each steak well with the oil, salt and pepper. Place the steak on the hot grill and sprinkle the thyme leaves on the top. Grill for 3 to 5 minutes, flip and grill another 3-5 mins for medium-rare.

Remove the steaks and loosely wrap in tin foil to rest for 5 minutes. Serve with the sauce.
