This is comfort food at it’s best! Fresh rice noodles are an affordable ingredient found in the refrigerated section of your local Asian grocery store. Fully cooked and needs only to be warmed up (i find the easiest way is to warm it up for a few minutes in the microwave). Used in a tradional Asian stir fry, means you are going to be enjoying this quick tasty meal within minutes! YUM!!
Beef and Chinese Broccoli Chow Fun
Servings 4
Ingredients
- 500 g pack fresh plain rolled rice noodles
- 1/4 cup peanut oil
- 250 g beef mince
- 4 cloves garlic minced
- 1 tsp fresh ginger minced
- 1 red hot chilli pepper sliced thinly
- 2 Tb shaoxing wine
- 100 g chinese broccoli trimmed, keep stems and leaves seperate
- 1 small carrot peeled and julienned
- 1 tsp cornstarch
- 2 Tb dark soy sauce
- 2 Tb oyster sauce
- 2 Tb regular soy sauce
- 1 Tb sesame oil
- 2 scallions sliced
- 1 cup cilantro roughly chopped
- salt & pepper to taste
Instructions

Chop vegetables and prepare the ingredients before you start cooking.

Slice the fresh noodle rolls on an angle at 1inch lengths. Steam for 3mins until warmed through and noodles soften.

In a large wok, heat the peanut oil and brown off the mince. Add in ginger, garlic, chilli and stir fry for a few minutes.

Deglaze wok with shoaxing wine, then add the stems of the broccoli along with the carrot.

Mix the cornstarch with 1Tb cold water to make a ‘slurry’. Add this along with the sauces and bring to a boil.

Stir in the broccoli leaves.

Stir in the rice noodles, scallions, sesame oil and cilantro.
