Fluffy double choc chip muffins… Sometimes you just gotta bake. Whether it’s the inviting aroma through your home, the happiness on your kids faces or just for some time-out with a warm cuppa… These muffins will do the trick! Repeat after me… double choc chip muffins… double choc chip muffins… Makes you happy doesn’t it? These airy, fluffy, chocolate treats are so easy to bake, which is a good thing, because they tend to disappear pretty fast! 🙂
Fluffy Double Choc Chip Muffins
- 130 g sugar (2/3 cup)
- 260 g plain flour (2 cups)
- 4 tsp baking powder
- 2 Tb cornflour
- 30 g dutch cocoa powder (1/3 cup)
- 2 eggs room temp
- 100 g salted butter softened
- 180 g milk (3/4 cup)
- 1 tsp vanilla extract
- 1 cup chocolate pieces
Preheat oven to 180C, triple sift the dry ingredients and set aside.
In a large bowl, whisk the eggs until fluffy, whisk in the soft butter, then milk and vanilla.
Sift in the dry ingredients and whisk until smooth. Fold through the choc chips.
Fill muffin cases half way and bake for 15mins. Enjoy!!
