Cheese and Apple Stuffed Chicken

Okay, I’m a sucker for breaded chicken and this one is a keeper! Crispy and golden on the outside, succulent and moorish on the inside with the savoury mix of cheeses, apple and lemon… Deelish! Cooking on A is for Apple (Gusto TV) has been super fun, but my favourite part? Eating it all up at the end!

Cheese and Apple Stuffed Chicken

Servings 4


  • ½ cup goat cheese, crumbled
  • ½ cup grated old cheddar
  • 2 apples tart variety, peeled and finely diced
  • juice and zest of 1 lemon
  • 2 cups panko breadcrumbs, divided
  • 4 skinless boneless chicken breasts
  • ½ cup flour
  • 2 eggs beaten
  • ½ cup grated Parmesan cheese
  • 2 Tb dried sage
  • 3 Tb canola oil
  • salt and pepper


  1. In a medium bowl, stir together goat cheese, cheddar, apples, lemon zest, lemon juice and 2 tbsp of breadcrumbs.

  2. Season with salt and pepper and mix well.
  3. Using a small knife, slice into the edge of the chicken breasts ¾ of the way through to form a pocket.
  4. Using a spoon, stuff each chicken breast with the cheese and apple stuffing.
  5. Press the edges of the pocket closed to seal.
  6. Season the chicken breasts with salt and pepper.
  7. To set up a dredging station, transfer flour to a small bowl and whisk eggs into a second bowl.
  8. In a third bowl, combine remaining breadcrumbs with Parmesan and sage.
  9. Flip each chicken breast in the flour, then dip into the eggs.
  10. Transfer chicken breasts into the panko mixture and flip, to coat.
  11. Pat breading onto chicken with your fingers.
  12. Repeat with remaining chicken breasts.
  13. Heat oil in a large skillet over medium-high heat, and preheat oven to 375F.
  14. Place chicken breasts into the hot oil and cook for 4-5 minutes, or until golden brown.
  15. Flip and continue cooking for 3-4 minutes, or until golden brown.
  16. Transfer chicken breasts to a parchment-lined baking dish.
  17. Bake for 15-18 minutes, or until chicken reaches an internal temperature of 170 degrees.
  18. Remove chicken from the oven, and let rest for 2-3 minutes. Serve hot with warm Green Beans on the side.
