Fluffy Double Choc Chip Muffins

Servings 12 muffins

Ingredients

  • 130 g sugar (2/3 cup)
  • 260 g plain flour (2 cups)
  • 4 tsp baking powder
  • 2 Tb cornflour
  • 30 g dutch cocoa powder (1/3 cup)
  • 2 eggs room temp
  • 100 g salted butter softened
  • 180 g milk (3/4 cup)
  • 1 tsp vanilla extract
  • 1 cup chocolate pieces

Instructions

  1. Preheat oven to 180C, triple sift the dry ingredients and set aside.
  2. In a large bowl, whisk the eggs until fluffy, whisk in the soft butter, then milk and vanilla.

  3. Sift in the dry ingredients and whisk until smooth. Fold through the choc chips.
  4. Fill muffin cases half way and bake for 15mins. Enjoy!!
